Favorite Seafood
I acquired my taste for crawfish during my first trip to New Orleans almost 12 years ago. I was there with a couple of friends. We stopped at an all you can eat seafood restaurant. It was where that I saw those little critters.
Eating crawfish needs a certain technique. They are boiled in a vat of spices. To get to the sweet and spicy meat you need to break the body in half, suck out the head innards which already has absorbed all the spices, and squeeze out the meat. It's not a lot of meat, that is why I like it.
To really properly enjoy the whole process, you have to use your naked hands. After you have finished eating crawfish, your table is dirty and probably your dress is filthy, but your appetite is satisfied.
I think in the incoming Great American Seafood Cook Off, this dish would be a great contender for a Cook off. I would like to see a variation of this dish.
I am very excited to see this event, because I am a big fan of seafood dishes and I think this event brings out the positivity of domestic seafood sustainability where the source is known, where it is local and fresh.
